We're happy to announce one successful farrowing and another on the way, and we're ready to take deposits for reserving a whole or half hog. You can find all the details here.

So why reserve one of our pastured, heritage hogs?

Proven Quality: This is our second year producing pork, and the first year was a big success. We can personally attest to the flavor and texture differences over supermarket pork: The pork is firm and tender, the pork chops are ringed with a delicious layer of fat that becomes like bacon when crisped up on the grill, the hams and roasts are succulent, and the bacon itself is luxurious. Our only complaint was that the butcher we used last year mixed the sausage and ground pork with too much fat, and we'll be rectifying that problem this year. If you want quality pork that tastes like the pork your grandparents ate, this is for you.

Focus on Animal Welfare: We treat our pigs with respect. While this seems like it should be a common sense way of raising animals, we fear that animal welfare and humane treatment of pigs gets lost in the race to the bottom factory farm system. Our pigs get plenty of space: large, rotating pastures in the summer and a cozy, deeply bedded barn in the winter. Our sows farrow (give birth) in nests they make themselves, not crates they don't allow them to lie down. The pigs are slaughtered on the farm with the absolute minimum of stress. You're welcome to come visit the farm and the pigs to see for yourself--we believe in absolute transparency.

Fair Pay for Farmers: We don't think farmers (or anyone!) should live in poverty. We set the prices of our pork to ensure that we can pay ourselves a fair wage. We're not going to get rich farming, but we're not willing to go broke either. This gives a sense of the economics involved.
